Finance Controller – Food & Beverage

About the role

The Finance Controller will lead all financial and accounting activities for the Food & Beverage operation at Nikki Beach Saint‑Tropez. Reporting to the General Manager and Director of Finance – F&B, you will provide accurate reporting, cost control and strategic insight to drive the venue’s financial success.

Key responsibilities

• Prepare and deliver timely financial reports, including flash reports, profit & loss statements, forecasts and management reports.
• Monitor daily revenue, cash controls, discounts, complimentary items, cancellations and operational expenses.
• Analyse F&B cost of sales, labour costs and operating expenses, identifying opportunities to improve profitability.
• Lead the monthly closing process and ensure all financial records are accurate and complete.
• Coordinate annual budgeting, forecasting, CAPEX planning and financial performance reviews.
• Review and authorise financial documentation such as petty cash, supplier payments, contracts and asset records.
• Ensure compliance with local regulations, tax requirements, licensing obligations and company policies.
• Implement strong internal controls and support internal and external audit processes.
• Oversee payroll reviews, service‑charge distributions and seasonal staffing cost analysis.
• Produce variance analysis and provide recommendations to improve financial performance.
• Partner with department heads to support financial planning and operational decision‑making.
• Manage, coach and develop members of the finance team.

Required profile

• Bachelor’s degree in Finance, Accounting, Business Administration or a related field.
• Strong background in hospitality finance, preferably within luxury hotels, resorts, restaurants or beach clubs.
• Excellent knowledge of budgeting, forecasting, payroll, cost control and financial reporting.
• Strong analytical and problem‑solving abilities with exceptional attention to detail.
• Proven leadership experience managing and developing finance teams.
• Ability to work effectively in a fast‑paced seasonal environment.
• Strong communication skills with the ability to influence operational and financial decisions.
